those who haven’t tasted it, Phoenix Beers is now distributing the beer to a WA bar near you.
• Pending application approval, two new Perth microbreweries are on the cards: Blacksalt Brewery in the Freo markets
and Wedge-tail Brewing in Mandurah. Keep your fingers crossed.
• You can cancel that trip north. Matso’s Lychee Beer is now available outside of its Broome brewery, the result of three
years of pestering from customers.
Move aside breweries. Make some space, wineries.
Perth’s distilleries are enjoying their time in the limelight
– the result of WA’s current fervor for small bars and
handcrafted cocktails. The West Winds Gin continues
to earn accolades around the world, while other local
distilleries like The Grove Distillery in Wilyabrup and The
West Australian Distilling Company in Freo continue to
perfect their craft. Joining them are a few new distilleries
with plans to put WA on the liquor map.
Bar trend: breakfast beer
Like the idea of a beer with your poached eggs?
Breakfast brews are popping up at bars and restaurants
around the city. The Quarie serves a Danish oatmeal
stout by the name of Mikkeller Beer Geek Breakfast
– a beer that’s brewed with a touch of coffee to create
smoky, dark chocolate notes. The folks at The Precinct
are equally smitten with a morning pint. “We love
breakfast beer,” says co-owner Daniel Morris. “Founders
Breakfast Stout, especially. It combines two things we
love: beer and coffee. It almost tastes like a black iced
coffee with some serious boom to it! A perfect way
to get your weekend started.” Something tells us the
mimosa’s days are numbered...
WHIPPER SNAPPER DISTILLERY, EAST PERTH |
A cavernous warehouse in East Perth is now home to
Australia’s first-ever dedicated bourbon distillery. While
the liquor – made from WA-grown wheat and corn – is
busy ageing, the Whipper Snapper folks are even busier
preparing the venue’s on-site retail store and tasting
GREAT SOUTHERN DISTILLING COMPANY,
MARGARET RIVER | This award-winning Albany distillery
is set to open its second venue in November on the
banks of Margaret River, with a cellar door, distillery and
tavern. Enjoying a dram of Limeburners whisky on the
outdoor terrace sounds like the perfect way to while away

HIPPOCAMPUS MEMORABLE DRINKS | The founders
and former owners of Little Creatures are said to be
creating a West Perth distillery called Hippocampus.
The venue will house a tasting room overlooking the
copper stills used to make rum and vodka. Hippocampus
will also be offering liquor from boutique UK distillery
Sipsmith Independent Spirits, including their popular
