Francophiles are loving the new STIX Bar in Burswood, which
opened over the winter. “Modern cuisine with a French accent”
is how owners (and husband-and-wife team) Mike and Kate Ayris
describe the cuisine created by head chef Francois Morabito, who
previously rattled the pans at Alain Fabregues’ Bistro des Artistes
in Subiaco. His menu features standout mains like the aged beef
tenderloin, which comes slathered with a homemade béarnaise
sauce and mashed potatoes, or the pea soup with foie gras. The wine
list is just as French, with its champagne, Sancerre and Grenache.
Not in the mood for vin? Order the French Martini – it’s one of the
bar’s best-selling cocktails and tres tasty. 31 The Circus, Burswood.

a sports bar complete with a fireplace, giant TV
screens and typical pub-grub fare.
• With its exclusive King Street address, uber-chic
small bar Door 49 has become the go-to watering
hole for Perth fashionistas.
• The new owners of The Office on Harrogate,
who took over the reins in winter, have given the
West Leederville small bar a spanking new menu
of scrumptious bar snacks and reasonably priced
cocktails. We love!
• Swallow, the pint-sized small bar in Maylands, is
now serving brunch and the best beignets this side
of the Mississippi. We dare you to think of a better
excuse for a Bloody Mary.
• Owners of The Classroom and Lucky Chan’s Laundry
+ Noodlebar have opened a new venue in Vic Park,
called Dutch Trading Co. Jenever cocktails and
“Budburst is a wine term referring to the first new
growth on the vine in spring,” says Budburst Small Bar
owner Rachael Niall, a local wine buff and former wine
manager at Steve’s. “I felt like it was an appropriate
description of the bar and my situation: this is the first
time I’ve owned a bar, run a business or put together
a wine list and menu!” You wouldn’t guess it from visiting
the buzzy Mt Hawthorn venue, which opened over winter
in place of Wee Bar. The menu has a decidedly French
bent, thanks to head chef Gwenael Lesle, formerly of
Friends Restaurant and Bouchon Bistro. His croque
monsieur and pan-fried scallops have become favourites
– for value and flavour – but the real attraction is behind
the bar. Rachael’s curated a wine and craft beer list that’s as
affordable as it is eclectic. “ I’m aware this is Mt Hawthorn
and not the Terrace, so I’ve made sure the prices appeal
to locals,” says Rachael. “There are 20 wines by the glass,
and 60 wines by the bottle. There are a couple of premium
wines, but it was important to me to include wines from
smaller, emerging winemakers that many people wouldn’t
have heard of. Same goes for the craft beer. I only buy
one keg at a time so there’s always something new and

from Albany’s Great Southern Distilling Company,
won gold and silver medals at the 2015 International
Wine and Spirits Competition (IWSC) in London in
July. It was the only Aussie spirit to win gold in any
category at this year’s awards. The distillery is also
about to open its second venue, in Margaret River,
this summer. Talk about the best year ever.
