Located above Freo’s cappuccino strip, Zapfhall is
a German-beer lover’s paradise: there’s traditional
beer and food (bratwurst and a stein of Hofbrau lager,
anyone?), the bar wenches wear corsets, and the
accordion-wielding Nikki wanders about, serenading

2. The Squire’s Fortune
The Squire’s Fortune is the latest incarnation of the
James Squire clan, complete with epic views to
Scarborough beach and some damn attractive
bartenders. 148 The Esplanade, Scarborough.
This German-themed, Singapore-founded beer hall
in 140 Perth is one of 14 in the world, across eight
countries. Sure, it sounds a bit zany, but the throngs of
customers can’t all be wrong. 140 William Street, Perth.
The unbelievably tasty Cantinero’s Kiss, concocted
by Perth’s own master cocktail slinger James
Connolly, has popped up at some of the best
small bars in town. It’s utter rum-watermelon-
elderflower-falernum perfection, and it’s put
James in the running to win the title at Australia’s
Bacardi Legacy Cocktail Competition. Order it
at Angel’s Cut by The Trustee, Enrique’s School
for to Bullfighting, The Dominion League, The
Classroom, Frisk, or 399 Bar – or, better yet,
impress your dinner party guests with your
50ml Bacardi Superior
30ml fresh watermelon juice
15ml fresh lime juice
3 dashes orange bitters
St Germain elderflower liqueur
Edible flower or lime twist
• Combine the Bacardi, watermelon juice,
falernum, lime juice and orange bitters.
• Shake for 10 seconds and fine strain into
a cocktail glass rinsed with St Germain
• Garnish with an edible flower or lime twist.
Who’d have thought a crumbling West
Perth warehouse would be distilling some
of the best WA-made vodka we’ve ever
tasted? Well, it’s not a huge surprise, when
you learn the team behind Hippocampus
Metropolitan Distillery is made up of
hospitality veterans, including a handful
of ex-Little Creatures folks and head
distiller Alex Poulsen, former head brewer
at Cheeky Monkey Brewery in Margaret
River. The distillery has just released its first
product, a super-smooth vodka bursting
with vanilla and fruit, and designed to
be drunk neat or mixed into a martini.
Its secret? A copper still manufactured in
Germany, and wheat grown three hours
east of Perth. Hippocampus hopes to
expand its repertoire to rum and other
spirits, as well as open a cellar door one
day. Until then, you’ll find the vodka behind
the bar at Ezra Pound, The Standard,
Clarences, 399 Bar, The Odd Fellow Bar, and
